How enzyme cleaners work
An enzyme cleaner does not dissolve a stain. It cuts it up.
Enzymes are proteins that break specific molecules into smaller pieces. Each one only recognizes a particular shape, which is why a cleaner aimed at grease is useless on blood and why the good ones carry several enzymes at once. Once the big molecules are in pieces, bacteria and plain water can carry them away, and the smell goes with them because the smell was those molecules.
That mechanism has one consequence that governs everything else on this site. Enzymes need time and moisture to do the cutting. Spray a mist, wipe it off after thirty seconds, and you have interrupted the process before it started.

Cat urine is the awkward one. It contains protein, which protease handles, and also uric acid crystals, which most enzymes do not touch. Those crystals sit in the fibres and reactivate when humidity rises, which is why a spot you cleaned in March smells again in July.
